Roasted asparagus and tomato salad

We’re celebrating the Vegetarian Society’s ‘National Vegetarian Week‘ (16th – 22nd May) by spotlighting a different vegetarian recipe every day this week on our blog.

All of the tasty recipes feature our new fruity dressings, available in three distinct flavours – Balsamic and Strawberry, Plum and Ginger, and Balsamic and Fig. They are so versatile that they can be used as a dress, dip or marinade and have have been shortlisted in this year’s Veggie Awards, to be announced on 27th May. The dressings are currently stocked in Waitrose and on waitrose.com and will also be available in Morrisons stores nationwide from 27th June.

Today’s featured recipe is a Roasted Asparagus & Tomato Salad complete with Mammy Jamia’s Balsamic & Strawberry Dressing.

Roasted Asparagus & Tomato Salad complete with Mammy Jamia’s Balsamic & Strawberry Dressing
(Serves 1)

Ingredients
6 spears of asparagus
A handful of cherry tomatoes
Salad leaves of your choice
Mammy Jamia’s Balsamic & Strawberry Dressing

Method

  • Pre-heat the oven to 190c.
  • Place the asparagus spears and tomatoes in a small roasting tin, drizzle with olive oil and season with salt and pepper. Place in the oven for 15 minutes.
  • Whilst the asparagus spears and tomatoes are roasting, make up your salad.
  • Once roasted, place the asparagus and tomatoes on top of your salad leaves and drizzle over the dressing. We’ve also added a bit of goat’s cheese to our salad but this is optional!

For another tasty meal, try replacing the strawberry dressing with Mammy Jamia’s Balsamic & Fig Dressing (also a delicious combination!)
