Plum and ginger chicken

Ingredients
- 2 chicken breasts cut into thin strips
- Mammy Jamia’s plum and ginger dressing
- 1tsp Chinese 5 spice
- 1 clove of garlic
- Stir fry veggies of your choice
- 1tbsp soy sauce
Method
- Put a little drizzle of olive oil into a pan and fry the chicken strips until cooked through
- Once the chicken is cooked through pour over the plum and ginger dressing until the chicken is covered and stir in the Chinese 5 spice
- Bring to the boil and then turn down the heat and simmer gently for about 15 minutes stirring occasionally, this will produce a thicker sticky sauce
- While the chicken is simmering, heat some oil in another pan, add the garlic and fry for about 2-3 minutes.
- Then add the stir fry vegetables for a further 5-6 minutes and then add the soy sauce
- Serve the chicken over the stir fried vegetables and enjoy immediately
