Balsamic and fig roasted vegetables


  • Mammy Jamia’s Balsamic & Fig Dressing
  • 2 sweet potatoes
  • 2 Maris piper potatoes
  • 3 carrots
  • 2 red onions
  • 1 leek
  • 6 cloves of garlic


  • Pre-heat the oven to 200C, place a good glut of olive oil in roasting tin and pop this in the oven to heat up
  • Cut the vegetable into large pieces and par boil the potatoes for about 15 minutes
  • Put the potatoes and all other vegetable in the hot oil and toss them in the hot oil
  • Put the vegetables back in the oven for 30 mins
  • After 30 mins remove from the oven and pour over as much fig dressing as you desire, mix in the dressing to ensure all the vegetables are covered and return to the oven for a further 10 mins.
