Plum and ginger chicken

Serves 2


  • 2 chicken breasts cut into thin strips
  • Mammy Jamia’s plum and ginger dressing
  • 1tsp Chinese 5 spice
  • 1 clove of garlic
  • Stir fry veggies of your choice
  • 1tbsp soy sauce


  • Put a little drizzle of olive oil into a pan and fry the chicken strips until cooked through
  • Once the chicken is cooked through pour over the plum and ginger dressing until the chicken is covered and stir in the Chinese 5 spice
  • Bring to the boil and then turn down the heat and simmer gently for about 15 minutes stirring occasionally, this will produce a thicker sticky sauce
  • While the chicken is simmering, heat some oil in another pan, add the garlic and fry for about 2-3 minutes.
  • Then add the stir fry vegetables for a further 5-6 minutes and then add the soy sauce
  • Serve the chicken over the stir fried vegetables and enjoy immediately
