Raspberry and Ginger compote

Ingredients

  • Fresh raspberries
  • Mammy Jamia’s Ginger Preserve

Method

  1. Put Ginger Preserve into a small saucepan over a low heat and stir until runny.
  2. Add washed raspberries and keep stirring until raspberries have disappeared into the sauce
  3. Keep over a low heat and stir until sauce has reduced
  4. Leave to go cool and serve with Greek yogurt and a side serving of raspberries and blueberries

This is such a quick and easy recipe and takes all the work out of using fresh ginger and then having to add sugar.

The compote is also good with pancakes!

This recipe can be adapted by using various berries (strawberries, blueberries and raspberries) with Mammy Jamia’s Plum Preserve – again great with ice cream and pancakes.
